Chef’s Note: Pink Pancakes Barbie style with white chocolate poke-a-dot medallions are sure to be a hit with anyone. This is an ode to the pink poke-a-dot dress Barbie wears in the movie. Have fun at breakfast and add a little splash of colour to a simple recipe that makes adults remember the Barbie days and youth think you’re really cool to make this for them. You’ll probably have many friends coming over for breakfast after they hear about these pancakes…You don’t have to tell them how easy they are to make…Enjoy!

Ingredients needed:

• Your favourite pancake mix

• 2% Milk

• 1 egg
• Pink food colouring
• White chocolate dollar medallions (pick up at any bulk food store)
• Pancake syrup (optional)

Directions:

• Take a large bowl and place 1 and ¼ cups of the pancake Mix and add milk to the pancake mix as per manufacturer’s recommendation.

• rack and add the egg into the mix.

• Mix all ingredients together until mixture turns into batter (until smooth-no lumps in the batter)

• Once batter is mixed and smooth, add a 4-6 drops off pink food colouring and mix the batter again until the colour is fully mixed in and you achieve the desired pink colouring of the batter.
• Take a small cup, fill it ¼ of the way and pour it onto a non-stick pan over medium heat. When the bottom side is slightly browned, flip to cook other side.
• Remove cooked pancakes from the grill and place them on your serving plate.
• Take the white chocolate dollar medallions and decorate the top of the pancakes (as shown in the picture or to your liking). Add syrup or butter to your liking.
